Chicken Cutlet also known as Russian Cutlet is a crispy non-veg snack made by using mashed potatoes, boneless chicken , French beans , cabbage and other vegetables. The outer crispiness of the cutlet comes due to the Sev (Roasted Vermicelli) which we use.
Ingredients for Chicken Cutlet:
- 7-8 piece of boneless chicken
- 2 tablespoon Ginger Garlic paste
- 1½ tablespoon Green Chilli paste
- Salt as per taste
- 10 French Beans chopped
- 2 medium-sized chopped Carrot
- ½ Big Cabbage chopped
- 1 medium-size sliced Capsicum
- 2 medium-sized Potato chopped
- 1 Soft Bread(Pav) / 5-6 slices of Bread
- 1 Egg
- 1 cup roasted Vermicelli for coating
- Oil for frying
Preparation of Chicken Cutlet:
- Turn on the gas on low flame and place a pressure cooker
- Add the french beans and carrot into the cooker.
- Next add the potato into the cooker.
- Now add in the Chicken pieces.
- Next we will add green chilli paste, ginger garlic paste and salt.
- Now with the help of a spoon, mix well all the ingredients in the pressure cooker.
- Cover the pressures cooker with its lid and turn the gas on medium-high flame
- Let it cook for 10-15 mins (upto 2 cooker whistles).
- After 10-15 mins(or 2 cooker whistles), turn off the gas flame and wait for 15-20 mins before you open the cooker. Let the cooker fully cool down and then open the pressure cooker lid and check if all the vegetables and the chicken are cooked or not.
- If everything is well cooked, keep this mixture aside. If not, repeat step 7 and cook it for some more time until our chicken and vegetables are cooked. (Usually gets cooked in 2 cooker whistles)
- Meanwhile till our cooker gets cooled, turn on the gas flame and place a pan.
- Add in 1 tablespoon of oil in the pan and let it heat for a minute.
- Once the oil is heated, add in the cabbage and capsicum
- Now add in the salt and stir this mixture well.
- Let it cook for 2 minutes.
- Once the mixture is fried, turn off the flame and remove the mixture in a large bowl/vessel and then in the same bowl add in our cooked vegetables and chicken mixture from the cooker.
- Take the chicken pieces out and start shredding the chicken and then again add the shredded chicken in the same bowl with the rest of our vegetables mixture.
- After adding the shredded chicken, mix all the ingredients together in the bowl and then with the help of a masher mash all the ingredients in the bowl very well.
- Once the mixture is well mashed, keep it aside.
- Take another bowl and add in water in the bowl.
- Take the soft bread or bread slices and soak the bread completely in the water.
- Once the bread is soaked, squeeze it well until all the water is drained out , then add this soaked bread in the bowl of your mashed cutlet mixture and mix it well.
- Take another bowl and break an egg into it.
- Add in a pinch of salt to the egg and beat the egg well and keep it aside.
- Then take some of our mashed cutlet mixture and make a round ball out of it and with the help of your palm flatten it and make it into the shape of a cutlet.
- Now coat this cutlet shaped mixture with the roasted vermicelli.
- Repeat the same process(step 25 and step 26) with the rest of the cutlet mixture and keep it aside(You can either fry them right away or store them and fry it later before eating).
- Turn on the gas and place a tawa or a frying pan.
- Add in the oil and let it heat for a minute.
- Once the oil is heated up, take your raw cutlet and dip it in the egg and then put it in the pan and fry it.
- Fry it for about 3 minutes and then flip it on the other side and fry again for another 3 minutes until they are golden brown.(Make sure to fry it from all sides as well).
- Once they are fried, remove them in a tissue paper for the excess oil to soak and then transfer it onto the serving plate.
- Our delicious chicken cutlet is ready. Serve the cutlet with ketchup , sauce or any chutney of your choice.
