Ingredients for Patholi
- ½ kg Rice Flour
- 1 Grated coconut
- ¼ kg Jaggery
- ½ tsp Salt
- 7-8 pieces of cardamom grounded to fine powder or 1 tsp cardamom powder
- 6-8 Turmeric leaves
- Water as required
Preparation
Preparing the leaves:
- Wash the Turmeric leaves nicely with water and let them dry for some time.
- If there is still water present on the leaves, take a clean cloth and wipe the water till the leaves are dry.
- Keep the dry leaves aside.
- Take one Turmeric leaf and cut it in half horizontally.
- Repeat the same steps for all the leaves.
Preparing the Dough:
- Take a large vessel for making the dough and place a siever over it.
- Pour all the Rice flour over the siever and sieve all the flour.
- Now add salt in the flour.
- Take 1 glass of hot water and add it little by little to the flour and start kneading the dough.
- If more water is required, add it accordingly and knead a dough. (The dough will be slightly sticky and not too dry).
- Keep this dough aside.
Preparing the Filling of our Patholis:
- Take the jaggery and bang it to a fine paste in the mortar pestle or with the help of a stone.
- Now add the grated coconut in the jaggery paste.
- Now with the help of your hand or a spoon, mix the mixture together.
- Then add in the Cardamom powder and mix the mixture again nicely and keep it aside.
Preparing the Patholis:
- Take one Turmeric leaf and place it over a plate.
- Take some dough and keep it over the leaf and start spreading it over the leaf.
- Use little water to spread if needed. (Do not spread the dough at extreme ends)
- Take one spoon of Jaggery-coconut filling and put it in the middle of the spreaded dough.
- Fold the leaf vertically and press slightly the edges of the leaf.
- Repeat steps 1-5 for all the remaining leaves and make the patholis.
Cooking the Patholis:
- Take a steamer/ idli vessel and pour water at the bottom and place the middle tray of the steamer/idli vessel on top of the water and cover the vessel with its lid.
- Turn on the gas flame and place the steamer/idli maker vessel on it.
- Open the vessel and start placing the patholis inside it.
- Let it cook for 30-40 mins and then turn off the gas flame.
- Open the lid and let it cool for some time.
- Transfer the patholis to a plate.
- Our patholis are ready.
- Serve the patholis hot and enjoy.
